Steak with Shallot Pan Sauce

Ingredients
  • 2 lbs steak
  • 1 tbs olive oil
  • 1 tbs butter (unsalted)
  • 1 shallot, chopped
  • 1/4 cup red wine (or broth/water), or red wine vinegar (optional)
  • 1 1/2 tsp worcestershire sauce
Instructions

Cut steak into portions if necessary. Sprinkle both sides with salt & pepper. Heat skillet to med/high. Add oil & butter. When butter mixture sizzles, add steak and sear it for 2-4 mins on one side. Add shallots to pan. Flip the meat & sear the other side for another 2-4 mins (to desired doneness), stirring shallots so they soften & begin to brown. Remove steaks to serving platter. Add wine (or red wine vinegar) and Worcestershire sauce to shallots in pan, stirring to pick up the flavors and make a pan sauce. Pour over steaks and serve.
