Slow Cooker Split Pea & Veggie Stew
Ingredients
  • 1 onion, medium, chopped
  • 3 garlic cloves, minced
  • 1 cup yellow (or green) split peas, dried
  • 1/2 cauliflower, chopped
  • 1 eggplant, chopped
  • 1/2 lb butternut squash, peeled & chopped
  • 14.5 oz diced tomatoes
  • 1 tbs cumin (ground)
  • 1 tsp turmeric
  • 1 tbs fresh ginger, grated
  • 2 cups vegetable broth, low sodium
  • 1/2 cup fresh cilantro, chopped
  • 2 oz baby spinach
Instructions

Combine all ingredients EXCEPT cilantro and baby spinach in slow cooker. Season with salt & pepper. Cook for 4 hours on high or 6 hours on low, adding a little water or broth if it seems dry. During last 10 mins of cooking, add cilantro and spinach.
