Ingredients
  • 16 oz salsa, mild
  • 1 tbs fresh cilantro, chopped
  • 1 tsp cumin (ground)
  • 1 onion, large, chopped
  • 2 cups frozen corn
  • 15 oz black beans, low sodium, rinsed & drained
  • 1 1/2 lbs beef stew meat, lean, cut into 1/2 inch pieces
Instructions

Mix 2 cups water AND all ingredients into slow cooker. Cover and cook on LOW for 8 to 9 hours (HIGH for 4 to 5 hrs) or until the beef is fork-tender.
