Green Bean Chicken Persillade

Ingredients
  • 1/2 cup fresh parsley, chopped
  • 2 scallions, chopped
  • 3 garlic cloves, minced
  • 2 tbs olive oil
  • 1 1/2 tbs fresh lemon juice
  • 2 lbs boneless chicken breast
  • 1 lb green beans, ends trimmed
Instructions

Combine parsley, scallions, lemon juice, half of garlic & half of oil in a bowl. Set aside. Cut chicken into cubes, or large pieces-about 2 inches. Heat rest of oil in large skillet on medium heat. Add remaining garlic to skillet, heat about 1 min until golden. Add chicken, season with salt & pepper and brown on both sides. Place green beans on top of chicken, then top with herb & garlic mix. Cover & cook until chicken is cooked through (an internal temperature of 165) and beans are crisp tender.
