Couscous with Cranberries & Arugula
Ingredients
  • 1 cup Israeli (pearl) couscous
  • 1/4 cup orange juice
  • 2 tbs olive oil
  • 2 tbs red wine vinegar
  • 1/2 cup cranberries, dried
  • 2 ribs celery, chopped
  • 4 cups baby arugula, chopped
  • 1 cup walnuts (optional)
  • 2 shallots, peeled & sliced
  • 1/4 cup feta cheese, crumbled (optional)
Instructions

Cook couscous per package instructions. In a small pot whisk orange juice, olive oil, red wine vinegar & dried cranberries and boil for 2 mins. Remove from heat and let dressing cool for at least 5 mins. In a large bowl, combine cooked couscous, celery, arugula, walnuts (if using), sliced shallots, dressing and cheese if desired.
