Braised Chicken with Lemon & Honey

Ingredients
  • 1 tbs olive oil
  • 2 lbs boneless chicken breast
  • 1 red onion, sliced
  • 12 garlic cloves, peeled, left whole
  • 1 lemon, juiced
  • 1 cup chicken broth, low sodium
  • 1/3 cup honey
  • 1 tsp oregano (dried)
Instructions

Heat oil in large skillet on high. Add chicken and cook on each side until golden. Remove to plate and set aside. Reduce heat to med and add onion and cook for 2 to 3 mins. Add garlic, lemon juice, chicken broth, honey, and oregano to skillet. Return chicken to pan. Reduce heat, cover pan and simmer for 15 to 20 mins or until chicken is cooked through (internal temp of 165). Preheat broiler. Remove chicken from pan, place on broiler pan (or sheet pan), and drizzle with a bit of the sauce. Place chicken under broiler for 3 to 4 mins until golden. Meanwhile, turn heat to high for the skillet sauce and cook for another 10 mins until slightly thickened. Serve chicken with sauce from skillet.
